I love farm eggs fried in coconut oil on buttered wheat toast (note the robust color of the yolks). It is always satisfying and takes no time at all. I seem to pay a fortune on good eggs but how can I not? The supermarket can't compete with real eggs from real chickens that run around and eat bugs and dirt. Even the organic, cage free variety are from chickens in unhappy conditions and thus their corn and soybean fed yolks are a far wimpier shade of yellow.

did you know that egg colour is actually a genetic trait that is bred in chickens quite differently for the american vs the european egg market? americans like yellow yolks.. i think europeans prefer a more orangey colour. strange but true.

ReplyDeleteI had no idea. But still, I think pastured eggs are better. They are better for baking and being fatty, strong and maybe just a little musky. I am no christian but I would prefer for even my chickens to have a better life.
